Gastro+ explores how wood could become a more accessible material for professional kitchens, helping to reduce microplastic consumption while improving everyday workflows
and ergonomics. The system centers around a maple cutting board designed to match standard Gastronorm dimensions. A milling on the underside allows the board to be securely placed
on 1/2 GN containers, enabling a seamless workflow and a flexible working height. Colored PVC rings indicate the intended food category, ensuring compliance with
established hygiene standards. The system is complemented by a power-coated spring steel clip that improves cutting ergonomics by providing better support for the index finger. It also serves as a hygienic
identifier for knives, protects the blade during storage, and can be used as a scraper. By offering a sustainable alternative to plastic, Gastro+ combines sustainability, ergonomics, and hygiene in a system that integrates elegantly into professional kitchen
environments.
